COURSE DESCRIPTION
The learner will be able to define the difference between Tequila and Mezcal. Using the three P’s the learner will understand how the ‘plant’ and the 65 varieties of agave can be used in production. How the ‘place’ and the production of Mezcal in the nine (9) states Oaxaca, Mexico are unique and the production of Mezcal is mostly artisanal still today.
COURSE OBJECTIVES
The learner will be able to understand the production process from harvest, cooking, milling or grinding, fermentation and distillation. The learner will be able to define the aging process and different levels as well as the Official Mexican Standard of Mezcal that is regulated by the Mexican Government. The traditions and methods of consumption will be addressed.
